Shiro-miso is the mildest variety of miso, the traditional Japanese fermented condiment.
Low in salt and rich in koji, it offers a delicately sweet flavor and a creamy, refined texture.
Its short fermentation makes it a unique miso, in which you can still perceive the authentic aroma and taste of the koji.

This Shiro-miso, prepared by Haruka from Les Apaisantes, has been slightly adapted to French culinary culture.
Many French people appreciate the subtle presence of koji grains and other ingredients; that’s why here in Brittany, we produce it in a gentle and natural style, designed to delight French palates.
To enjoy a texture closer to traditional Shiro-miso, you can grind it with a mortar and pestle before eating.

It pairs wonderfully with delicate Japanese cuisine: clear soups, simmered root vegetables, marinated or grilled fish.
It also complements French recipes perfectly: add a touch to a pot-au-feu, or mix with butter or honey on a slice of bread for a delightful surprise.
Like a “fermented cream,” Shiro-miso brings roundness, sweetness, and depth to every dish.
