Organic Artisanal Miso
Rice-Chickpea Miso, Hiyoko miso (Aged 1 year)

Its gentle flavor pairs especially well with sauces, dressings, white fish, and legume-based dishes.
It’s an easy and delicious addition to French cuisine.

ORGANIC
Dashi (Japanese Broth) *Vegan
We have combined kombu and shiitake, two key ingredients in Japanese dashi, with wasabina mustard and nettle, both rich in umami and nutrients, harvested from our garden.
For this seasonal blend, we have also added Japanese turnips, harvested as spring transitions into summer. The temperature fluctuations during this period enhance their natural sweetness, bringing a new depth to the flavor.

Les apaisnates

We carry out every step of our work by hand with great care, from sowing the seeds to packaging. We also gather wild plants, either on our farm or in areas that are unspoilt and free from pollution. In addition, we work with foragers who specialise in wild plants in mountainous regions of France, as well as with fellow dedicated producers, in order to offer you high-quality herbs.
To preserve the richness and diversity of our farm, we practise soil-friendly farming. We grow green manure crops, use ground covers or organic mulch, and avoid deep ploughing in order to protect the structure and vitality of the soil. We also intentionally leave grassed areas and fallow land to provide a haven for insects, small animals and birds.
We hope our products will resonate with those who wish to care for their body and mind, as well as with all who cherish the natural world.
