Dashi is an essential element of Japanese cuisine, adding the famous umami flavor to dishes. Traditionally, it is prepared using kombu and katsuobushi (dried bonito). At Les Apaisantes, we have chosen a vegetarian dashi so that everyone can enjoy it.
We have combined kombu and shiitake, two key ingredients in Japanese dashi, with wasabina mustard and nettle, both rich in umami and nutrients, harvested from our garden.
It enhances the flavor of many dishes such as miso soup, stir-fries, risotto, marinades, omelets, fried rice, and even yakisoba. Heat the product for about 5 to 10 minutes, as it contains shiitakes.
UMAMI, what is it?
Umami is one of the five basic tastes, alongside sweet, sour, salty, and bitter. This Japanese term means "delicious and savory taste" and is characterized by a pleasant and lasting sensation in the mouth.

Our philosophy
In our fields, every step, from sowing the seeds to packaging, is carried out with care and by hand. We also harvest some wild plants on our farm as well as in unspoiled locations. Additionally, we collaborate with other growers and specialists in wild harvesting in the mountains of France.
To preserve the richness and diversity of our garden, we have chosen to practise conservation agriculture. We sow green manure, use tarps and organic mulch, but never work the soil deeply to maintain its structure and vitality. We intentionally leave some areas fallow or with tall grass to provide shelter for insects, small mammals, and birds that love to hide there.
The packaging is simple food-grade kraft paper. To preserve the plants as best as possible, we recommend storing them in a dry place away from light.
